Castello ColleMassari I.G.P. ***, from the Maremma coast of southern Tuscany, is one of the finest expressions of Tuscan olive oil. It is produced by the Bertarelli family in the Montecucco wine area using entirely organic farming methods. This oil is a blend of the classic Tuscan cultivars Leccino, Frantoio, and Moraiolo. Among their groves of Olivastra Seggianese, ColleMassari boasts three of the ten oldest olive trees in Tuscany, each at least 930 years of age. This brilliant olive oil is elegantly spicy and fruity, with hints of bitter greens, aromatic wild herbs, and the pronounced flavor of artichoke.
For the production of this olive oil of the highest "Extra Vergine" quality, only olives from organic farming are hand-picked and cold pressed within 24 hours at the oil mill. This allows for an olive oil with lower acidity and less bitter substances. Quick pressing also ensure the oil will become milder and more aromatic as it ages. The oil is carefully filtered before bottling.
***I.G.P. stands for Indicazione Geografica Protetta (literally Protected Geographical Indication) and it indicates a mark of origin that is assigned by the European Union to agricultural and food products for which a certain quality, reputation or other feature depends on its geographical origin, whose production, modification and/or processing takes place in a certain geographical area.
Uses: This Tuscan blend is ideal for both cooking and finishing. Try gently heating jarred white beans or lentils in olive oil with whole cloves of garlic and a pinch of sea salt. Swirl into soups like a spring minestrone, or use to finish off green leafy salads filled with colorful vegetables and fresh cheeses.
For a simple starter, try Italian pinzimonio (raw vegetables dipped in olive oil and lemon juice). For the dressing, whisk together one part lemon juice and three parts olive oil, and season with salt, to taste. Serve with crudités like raw fennel, baby carrots, celery, endive and radishes.
